So Yummy, Lactation Cookies

My favorite way to support friends that just brought home a new baby is to provide them some yummy lactation cookies! I like to bake 5-6 cookies for them to eat immediately and then freeze the rest of the batter (think break-apart cookies) so they can make a few at a time when they want them through out the next few months.



Ingredients:

4 TBSP warm water

2 TBSP flax seed meal (not whole flax seeds)


1 c. softened butter

1 c. sugar

1 c. brown sugar

2 eggs (room temp)

1 tsp vanilla


1 c. all purpose flour

1 c. whole wheat flour

4+ TBSP brewers yeast

1 tsp baking soda

1 tsp salt


3 c. traditional rolled oats

1 c. dark chocolate chips


Steps:

Pre-heat oven to 350

Mix flax seed meal and warm water. Let sit for 3-5 minutes

Beat butter, sugar, and brown sugar until creamy with mixer

Add eggs and mix well

Add flaxseed mix and vanilla. Mix well

In another bowl combine, flour, wheat flour, brewers yeast, baking soda, and salt

Add these dry ingredients to the butter and sugar mixture in the stand mixer

Add oats and chocolate chips and stir (it is very thick so you may have to use a spoon or your hands)

Scoop mixture and roll into ball shape (I use a 1/4c scoop)

Flatten the balls of dough slightly to create a thick disk shape. This helps with freezing and baking equally.


If you are baking immediately- bake 12 minutes. Let cool slightly and enjoy!


If you want to freeze for later- cover the cookie sheet with cling wrap or something similar and place in the freezer for 30 minutes or until dough is firm. Then, take the frozen dough and transfer them to a freezer gallon bag. Now these are good to freeze for several months, but they will likely not last that log. When you are ready to bake them, put as many as you would like on a cookie sheet and bake for 15 minutes.


TIP - These cookies are so beloved by my family that they request them even when we haven't had a new baby in the house for a while. I highly suggest making a second batch just for yourself to enjoy. I assure you, they are absolutely delicious!
